Spaghetti Salad

  1. In a large heavy skillet, heat oil until hot but not smoking. Add garlic and saute until golden brown.
  2. Add tomatoes, parsley and oregano.
  3. Simmer 35 to 40 minutes, adding salt and pepper to taste.
  4. Serve over cooked and drained pasta of your choice and toss with freshly grated Parmesan cheese.
  5. Serve immediately.
