Spaghetti Salad
- 1 to 1 1/2 lb. spaghetti, broken into pieces, cooked, drained and cooled *
- 16 oz. bottle Zesty Italian dressing
- 1 jar McCormick Salad Supreme seasoning (this is essential)
- 1/2 diced red onion
- 2 diced tomatoes or bunch halved cherry tomatoes
- 1 diced cucumber
- 1 diced small green pepper
- 1 can black olives
- 1/4 c. olive oil
- 2 garlic cloves, chopped
- 5 c. whole, seeded and drained fresh tomatoes or canned Italian tomatoes
- 1/4 c. chopped fresh oregano or 1 tsp. dried
- salt and pepper
- 1/2 c. freshly grated Parmesan cheese
- In a large heavy skillet, heat oil until hot but not smoking. Add garlic and saute until golden brown.
- Add tomatoes, parsley and oregano.
- Simmer 35 to 40 minutes, adding salt and pepper to taste.
- Serve over cooked and drained pasta of your choice and toss with freshly grated Parmesan cheese.
- Serve immediately.
