Stollen
- 1 lb. golden raisins
- 1/4 lb. blanched, chopped almonds
- 1/4 lb. fruit cake mix (citron)
- 1/4 tsp. mace
- 1/4 tsp. nutmeg
- 1 c. sugar
- 3/4 tsp. salt
- grated lemon rind (1/2 to 1 Tbsp.)
- 2 Tbsp. lemon juice
- 1/2 lb. butter
- 1 envelope yeast
- 1 1/2 c. milk
- 6 c. flour
- 3 whole eggs
- Soften yeast in 1/4 cup lukewarm water.
- Melt butter (margarine or half and half) in milk.
- In large mixer bowl, put sifted flour with salt.
- Make a well in center and add the milk/butter mixture (slightly cooled) and eggs.
- Stir with a wooden spoon to blend along with the yeast.
- Add the fruit and sugar mixture.
- Knead or use dough hooks and work until smooth, elastic and cleans the bowl.
- Cover with towel and set in warm (not hot) place for 12 hours.
