Broccoli, Tomato And Basil Frittata
- 1 (8 oz.) container Egg Beaters (equivalent 4 eggs)
- 3 Tbsp. milk (whole or skim)
- 3 Tbsp. Parmesan cheese, grated
- fresh ground pepper to taste
- 3 Tbsp. olive oil
- 1 medium onion, diced
- 3 medium tomatoes, peeled, seeded and diced
- 1 Tbsp. fresh basil, chopped or 1 tsp. dry
- 1/2 c. sliced mushrooms
- 1/2 c. chopped broccoli or zucchini
- Preheat oven to 325u0b0.
- Oil 7 to 8-inch baking dish.
- In large bowl, combine first 4 ingredients.
- Saute in oil for 5 minutes. Add tomato and basil and saute 10 minutes, stirring frequently. Add broccoli and mushrooms and cook 5 minutes more.
- Add this mixture to eggs and pour into prepared dish.
- Bake 15 to 17 minutes, until just set.
- Do not overbake.
- Serve immediately.
