Key Lime Cheesecake(Low In Cholesterol And Sugar)

  1. Combine crumbs, margarine and sugar substitute (several). Stir well.
  2. Press into bottom of spring-form pan.
  3. Bake at 350u0b0 for 8 minutes.
  4. Cool.
  5. Stir yogurt and drain through cheesecloth. Sprinkle gelatin over lime juice.
  6. Let stand 1 minute.
  7. Add 1/2 cup sugar.
  8. Cook until dissolved.
  9. Remove and let cool.
  10. In food processor, blend
  11. cottage cheese, cream cheese and gelatin. Process until smooth.
  12. Add yogurt and process until smooth.
  13. Stir in rind.
  14. Pour over crust.
  15. Cover and chill.
