Party Snacks
- 1 c. cherry tomatoes
- 4 carrots, peeled and cut into sticks
- 1 lb. fresh Brussels sprouts
- Herbed Cottage Cheese (following)
- 2 cucumbers, thinly sliced
- 1/4 lb. fresh mushrooms
- 1/2 lb. frankfurters
- 1 small red cabbage
- Wash and trim tomatoes.
- Slice the cucumbers.
- Peel and cut the carrots into sticks.
- Wash the mushrooms.
- Cover and chill. Drop the Brussels sprouts into boiling salted water.
- Reduce heat. Cover and simmer about 10 minutes or until done.
- Drain.
- Boil frankfurters for 5 minutes, drain.
- Or, fry frankfurters.
- Cut into thirds.
- Place cabbage head on serving platter.
- Skewer on the frankfurters and mushrooms with frilled toothpicks.
- Surround with tomatoes, cucumbers, carrots, Brussels sprouts and bread sticks.
- Serve with Herbed Cottage Cheese.
