Dried Fruit Cake
- 1 c. chopped dates
- 1 c. golden raisins
- 3/4 c. dry sherry
- 1/2 tsp. baking powder
- 1 c. each: chopped pecans and sa/pistachios
- 3 eggs
- 1 c. chopped dried apricots
- 1 c. chopped figs
- 3/4 c. each: flour and sugar
- 1 c. slivered almonds
- 1/2 c. chopped crystallized ginger
- 1/2 tsp. almond extract
- Butter a 5 x 9-inch loaf pan lined with parchment or wax paper.
- Combine dates, apricots, raisins, figs, 1 tablespoon minced fresh ginger and 1/2 cup sherry.
- Mix well and let stand 30 minutes.
- Then stir together flour, sugar, baking powder, almonds, pecans, pistachios and crystallized ginger.
- Beat together eggs and almond extract.
- Add egg and nut mixtures to fruit evenly. Bake in 300u0b0 oven until top is golden brown, about 1 1/2 hours.
