Dried Fruit Cake

  1. Butter a 5 x 9-inch loaf pan lined with parchment or wax paper.
  2. Combine dates, apricots, raisins, figs, 1 tablespoon minced fresh ginger and 1/2 cup sherry.
  3. Mix well and let stand 30 minutes.
  4. Then stir together flour, sugar, baking powder, almonds, pecans, pistachios and crystallized ginger.
  5. Beat together eggs and almond extract.
  6. Add egg and nut mixtures to fruit evenly. Bake in 300u0b0 oven until top is golden brown, about 1 1/2 hours.
