Miniature Banana Bran Muffins
- 1 large egg
- 3/4 c. packed brown sugar
- 1 1/2 c. mashed ripe bananas
- 1/2 c. walnuts, chopped
- 1/3 c. vegetable oil
- 1 tsp. vanilla extract
- 3/4 c. all-purpose flour
- 3/4 c. whole wheat flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/2 c. oat bran
- Beat egg and sugar in a bowl.
- When smooth, beat in bananas, walnuts, vanilla and oil.
- Let stand for a few minutes.
- Thoroughly mix all-purpose and wheat flour, baking powder, baking soda, cinnamon, salt and bran in a large bowl.
- Add banana mixture and fold in with a wooden spoon until dry ingredients are moistened. Spoon batter into muffin cups.
- Bake at 375u0b0 for about 20 minutes. Center should be springy to the touch.
- Makes 4 dozen miniature muffins.
