Martin'S Loaf
- 2 to 3 lb. beef round steak
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 tsp. paprika
- 1/2 lb. mushrooms, sliced
- 1 large onion, sliced
- 20 stuffed green olives
- 1/2 c. melted butter
- 1 egg
- 3/4 c. dry red wine
- Have butcher bone round steak and put through cuber.
- Place meat on flat surface; sprinkle with half the salt, pepper and paprika.
- Top with layer of mushrooms, onion (separated into rings) and olives, then sprinkle with crumbs.
- Mix melted butter with egg; pour over stuffing.
- Roll meat, jelly roll fashion.
- Tie with string.
- Put into shallow dish.
- Pour wine over top.
- Sprinkle with remaining salt, pepper and paprika.
- Bake at 325u0b0 for 1 hour, basting once or twice.
- Slice and serve with pan juices.
- Makes 6 servings.
