Grannies Fruit Cake
- 1 c. dates, pitted
- 2/3 c. butter
- 1/4 c. dark molasses (I use dark Karo)
- 1 c. raisins (seedless)
- 1 1/4 c. brown sugar
- 1 1/2 c. hot water
- 1 lb. mixed fruit (pineapple, cherry)
- 2 c. chopped nuts
- 2 eggs
- 3 c. flour
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. soda
- Combine first 6 ingredients.
- Boil gently for 3 minutes, then cool in large mixing bowl.
- Add mixed fruit and nuts.
- Beat in eggs.
- Sift in flour and
- add cinnamon, nutmeg, baking powder, salt and soda.
- Beat well after each addition.
- Pour into tube pan and bake in very slow oven at 275u0b0 for 2 1/2 hours or until completely done.
