Coconut Spice Cake
- 1 c. vegetable oil
- 1 c. firmly packed brown sugar
- 1 c. sugar
- 2 eggs
- 2 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. buttermilk
- 1 tsp. vanilla
- 1 c. flaked coconut
- 1 c. pecans
- Combine first 3 ingredients and beat well. Add eggs, one at a time, beating well after each addition.
- Combine flour and next 4 ingredients. Add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture.
- Stir in vanilla, coconut and chopped pecans. Pour batter into 2 greased 9-inch round cake pans. Bake at 350u0b0 for 25 minutes. Cool cake layers in pans for 10 minutes.
- Remove and frost.
