Marinated Vegetable Snack

  1. Advance preparation:
  2. In saucepan, simmer carrots, covered, in small amount of water for 2 minutes.
  3. Add broccoli and cauliflower; bring to boiling.
  4. Reduce heat; simmer 3 minutes more.
  5. Drain.
  6. Combine all vegetables.
  7. Combine cooking oil, vinegar, oregano, salt and pepper; pour over vegetables.
  8. Cover. Chill at least 8 hours; stir occasionally.
  9. Makes 4 cups.
