Marinated Vegetable Snack
- 2 carrots, cut into sticks
- 1 c. broccoli buds
- 1 c. cauliflowerets
- 1 medium cucumber, sliced
- 1 medium zucchini, cut into sticks
- 1 small onion, sliced and separated into rings
- 1/2 c. cooking oil
- 3 Tbsp. white wine vinegar
- 1 tsp. dried oregano, crushed
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Advance preparation:
- In saucepan, simmer carrots, covered, in small amount of water for 2 minutes.
- Add broccoli and cauliflower; bring to boiling.
- Reduce heat; simmer 3 minutes more.
- Drain.
- Combine all vegetables.
- Combine cooking oil, vinegar, oregano, salt and pepper; pour over vegetables.
- Cover. Chill at least 8 hours; stir occasionally.
- Makes 4 cups.
