Healthy Chocolate Chip Cookies
- 1/2 c. (1 stick) butter or margarine, at room temperature
- 1/2 c. chunky real peanut butter
- 3/4 c. sugar
- 3/4 c. packed brown sugar
- 2 eggs
- 2 tsp. vanilla
- 3/4 c. whole wheat flour
- 1 1/2 c. unbleached flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. uncooked oatmeal
- 2 c. semi-sweet chocolate chips
- Stir flour, baking soda and salt in a bowl.
- In a large mixing bowl, cream butters with sugars, eggs and vanilla.
- Mix in oatmeal and chocolate chips.
- (Add sunflower seeds or nuts if desired.) Blend in dry ingredients.
- Drop by tablespoons onto ungreased cookie sheet.
- Bake at 375u0b0 for 11 to 13 minutes or until golden brown.
