Sausage Cake
- 1 lb. mild sausage
- 1 1/2 c. sugar
- 1 1/2 c. brown sugar
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 c. boiling water
- 1 c. buttermilk
- 1 1/2 Tbsp. baking soda
- 2 c. flour
- 1/2 c. mixed dried fruit
- 1/2 c. chopped black walnuts
- 1 c. flour
- 1 c. raisins
- Mix first 7 ingredients by hand, then add boiling water and buttermilk with soda, dissolved in 2 cups flour.
- Mix well.
- Mix dried fruit, black walnuts, 1 cup flour and raisins.
- Add fruit mixture to batter.
- Bake in greased tube pan at 350u0b0 for 1 hour and 20 minutes.
- Let cool.
- Cover with heavy foil.
- Can be refrigerated for up to 1 week or can be frozen.
