Hamburger-Vegetable Casserole
- 1/2 c. diced onion
- 2 Tbsp. butter
- 1 lb. lean hamburger
- 1 c. diced celery
- 1 c. sliced carrots
- 1/3 c. diced green pepper
- 1 beef bouillon cube
- 3/4 c. hot water
- 1 1/2 tsp. salt
- 1/8 tsp. ground black pepper
- 2 Tbsp. flour
- 1/4 c. cold water
- 2 c. mashed potatoes
- Saute onion in butter.
- Add meat and cook until all the pink has disappeared.
- Add celery, carrots, green pepper, beef bouillon cube, hot water and seasonings.
- Cover and cook for 5 minutes.
- Mix flour and cold water until smooth and add to mixture.
- Turn into a 1-quart casserole.
- Spoon fluffy mashed potatoes around edge of the casserole.
- Bake at 350u0b0 for about 45 minutes or until the top has become a golden brown.
- Serves 4.
