Pineapple Upside-Down Cake
- 2 Tbsp. butter or margarine
- 1/4 c. brown sugar
- 1 1/3 c. baking mix
- 3 Tbsp. soft shortening
- 3/4 c. milk
- 1 tsp. vanilla
- 1 (8 1/4 oz.) can sliced pineapple, drained
- 3/4 c. granulated sugar
- 1 egg
- Preheat oven to 350u0b0.
- Melt 2 tablespoons butter/margarine in an 8 or 9-inch square or round baking pan.
- Sprinkle with brown sugar.
- Arrange drained pineapple slices in the butter brown sugar mixture in the pan.
- Prepare cake batter.
- Mix baking mix and sugar; add shortening, egg and 1/4 cup milk ad beat vigorously by hand for 1 minute.
- Gradually add
- remaining milk and vanilla and beat for 1/2 minute by hand.
- Pour batter over fruit and sugar mixture.
- Bake for 35 to 40 minutes; invert at once on serving plate.
- After 1 minute, remove pan.
- Makes 9 servings.
