Corn Chowder
- 1 lb. smoked sausages
- 1 c. potatoes, cubed
- 2/3 c. water
- 1/2 tsp. pepper
- 2 Tbsp. butter
- 2 (10 oz.) pkgs. frozen corn (I use creamed corn from can)*
- 1 c. chopped onion
- 1 Tbsp. chicken bouillon granules
- 3-1/2 c. milk
- 1/4 c. flour
- Slice sausage into 1/4-inch thick slices.
- In a dutch oven, combine sausage, corn, potatoes, onion, water, bouillon, and pepper.
- Bring to a boil; reduce heat.
- Cover and simmer about 10 minutes until corn and potatoes are just tender, stirring occasionally.
- Stir in 3 c. of the milk and the margarine.
- Combine remaining milk and the flour.
- Stir milk-flour mixture into the corn mixture.
- Cook and stir over medium heat until thickened and bubbly.
- Cook and stir 1 minute more.
- *If using creamed corn, add creamed corn just before stirring in the milk.
- Makes 6 main servings.
