Oysters Salisbury
- 2 doz. Maryland oysters in shell
- 2 Tbsp. butter or margarine
- 2 Tbsp. flour
- 2 c. milk
- 2 Tbsp. shredded Swiss cheese
- 1 tsp. grated Parmesan cheese
- 1 tsp. Worcestershire sauce
- 1/4 tsp. nutmeg
- 1/8 tsp. pepper
- salt to taste
- 5 oz. chopped spinach
- Open oysters, letting remain in deep half of shell.
- Melt butter in 1-quart saucepan, blend in flour and slowly add milk. Simmer for 5 minutes, stirring occasionally.
- Add the Swiss and Parmesan cheese and stir until cheese melts.
- Stir in Worcestershire sauce, nutmeg, pepper and salt.
- Cook spinach and squeeze out excess moisture.
- Blend spinach into cheese sauce and let mixture cool.
- Top each oyster with 1 tablespoon spinach mixture.
- Sprinkle with Parmesan cheese and bake at 400u0b0 for 10 to 15 minutes.
- Makes 2 dozen.
