Spinach Salad With Garlic Dressing

• Salad
• 5 cups spinach
• 1 medium onion, chopped
• 1/2 cup diced celery
• 4 hard-boiled eggs, chopped
• 1/4 teaspoon pepper
• 1 tablespoon capers
• Dressing
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1/4 teaspoon cayenne
• 1/4 teaspoon dry mustard
• 2 tablespoons vinegar (rice or regular)
• 1 tomatoes, pureed
• 1 dash Tabasco sauce
• 1 cup canola oil
• 2 -5 cloves garlic, crushed

1. ---------Salad----------.
2. boil eggs and chop.
3. wash spinach well and dry, tear into small pieces.
4. in a large bowl combine spinach, onion, celery, eggs, salt and pepper.
5. chill well.
6. just before serving pour garlic dressing over salad and toss lightly.
7. garnish with capers.

9. combine all ingriedients and puree with moulinex or hand blender.
