Meat Loaves(Large-Quantity Recipe)
- 15 1/2 lb. ground meat (equal parts of 2 kinds, lamb, beef, pork)
- 1 1/2 lb. finely chopped onions
- 1 1/2 lb. finely chopped celery
- 6 cloves garlic, minced or pressed
- 3 lb. soft bread crumbs
- 3 oz. salt
- 1/4 oz. pepper
- 24 eggs, slightly beaten
- 1 1/2 to 2 qt. meat stock
- Combine meat, onions,
- celery
- and
- garlic.
- Add
- bread crumbs, salt, pepper, slightly
- beaten
- eggs
- and
- stock.
- Mix well but do not over-handle.
- Moldtnto
- loaves
- the width of baking pans, 3-inches high and 4-inches wide.
- Brush tops with bacon fat.take, uncovered,
- and
- without water, in 325u0b0 oven for 1 1/2 hours or until
- desired doneness is reached.to not overcook.
- Strained pan juices may be made into gravy with any favorite recipe.
- Yields 50 servings, 5 ounces each.
