Meat Loaves(Large-Quantity Recipe)

  1. Combine meat, onions,
  2. celery
  3. and
  4. garlic.
  5. Add
  6. bread crumbs, salt, pepper, slightly
  7. beaten
  8. eggs
  9. and
  10. stock.
  11. Mix well but do not over-handle.
  12. Moldtnto
  13. loaves
  14. the width of baking pans, 3-inches high and 4-inches wide.
  15. Brush tops with bacon fat.take, uncovered,
  16. and
  17. without water, in 325u0b0 oven for 1 1/2 hours or until
  18. desired doneness is reached.to not overcook.
  19. Strained pan juices may be made into gravy with any favorite recipe.
  20. Yields 50 servings, 5 ounces each.
