Fruit Cookie Pie

  1. In medium bowl, beat together butter and sugars until light and creamy.
  2. Add egg and vanilla; beat well.
  3. Combine flour, baking powder and salt.
  4. Gradually blend into butter mixture until just moistened.
  5. Press dough evenly into 12-inch pizza pan or pie crust.
  6. Sprinkle with 1 tablespoon sugar.
  7. Bake in 375u0b0 oven for 15 to 20 minutes or until lightly browned.
  8. Remove and cool. Spread with pudding, leaving 1-inch all around.
  9. Arrange fruit on pudding.
