Fruit Cookie Pie
- 3/4 c. butter
- 1/4 c. firmly packed brown sugar
- 1/2 c. sugar
- 1 egg
- 1 tsp. vanilla
- 2 c. flour
- 3/4 tsp. baking powder
- 1/8 tsp. salt
- 1 Tbsp. sugar
- 1 1/2 to 2 c. prepared vanilla pudding
- 1 1/2 c. each: sliced kiwi, sliced strawberries, orange slices, raspberries and blueberries
- In medium bowl, beat together butter and sugars until light and creamy.
- Add egg and vanilla; beat well.
- Combine flour, baking powder and salt.
- Gradually blend into butter mixture until just moistened.
- Press dough evenly into 12-inch pizza pan or pie crust.
- Sprinkle with 1 tablespoon sugar.
- Bake in 375u0b0 oven for 15 to 20 minutes or until lightly browned.
- Remove and cool. Spread with pudding, leaving 1-inch all around.
- Arrange fruit on pudding.
