Taste Of Oregon Frosted Meatloaf

  1. Combine the first 10 ingredients (everything up to the mashed potatoes).
  2. Mix well & shape into an oval loaf in a shallow baking dish.
  3. Bake at 350u0b0 for 1 hour.
  4. Remove from oven & place on a baking sheet or heat-proof serving platter.
  5. Combine potatoes, egg, mayo, salt, pepper, and cheese.
  6. Frost the meatloaf.
  7. Broil until potato topping is golden brown & puffy.
  8. Garnish with tomato, olives, mushrooms, pimiento, &/or parsley as you like.
