Turkey Chowder(Low-Fat Soup)
- 1 tsp. olive oil
- 1 large onion, sliced thin
- 1/4 c. chopped green pepper
- 3 medium carrots, diced
- 3 medium potatoes, peeled and diced
- 2 stalks celery, sliced
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. thyme
- 1/2 tsp. basil
- 1/4 tsp. sage
- 1/2 tsp. garlic powder
- 6 c. chicken stock
- 3 c. cubed cooked turkey (cook in water and use for stock)
- 1 (17 oz.) can creamed corn
- 2 tsp. chopped pimento
- 1/4 c. chopped fresh parsley
- Heat oil in a large pot.
- Saute onion and peppers until onion is translucent.
- Add carrots, potatoes, celery, salt and spices. Mix well.
- Add stock and simmer for 15 minutes until potatoes and carrots are soft.
- Add turkey, corn and pimento.
- Heat through but do not boil.
- Just before serving, stir in parsley and adjust seasonings to taste.
