Turkey Chowder(Low-Fat Soup)

  1. Heat oil in a large pot.
  2. Saute onion and peppers until onion is translucent.
  3. Add carrots, potatoes, celery, salt and spices. Mix well.
  4. Add stock and simmer for 15 minutes until potatoes and carrots are soft.
  5. Add turkey, corn and pimento.
  6. Heat through but do not boil.
  7. Just before serving, stir in parsley and adjust seasonings to taste.
