Perfect Divinity
- 2 c. sugar
- 1/2 c. white corn syrup
- 1/2 c. hot water
- 1/4 tsp. salt
- 2 egg whites
- 1 tsp. vanilla
- 1/2 c. chopped nuts (optional)
- Butter sides of 2-quart saucepan.
- In it combine sugar, corn syrup, hot water and salt.
- Cook and stir until sugar dissolves and mixture comes to boiling.
- Cook to hard ball stage without stirring (strings form from spoon).
- Remove from heat. Immediately beat egg whites until stiff. Pour hot syrup slowly over stiffly-beaten egg whites, beating constantly at high speed with electric beater (about 5 minutes).
- Add vanilla; continue beating until mixture forms soft peaks and begins to lose its gloss.
- Add chopped nuts.
- Drop divinity from teaspoon, pushing off with second spoon on cookie sheet covered with waxed paper.
