Sally'S Seafood Chowder
- 4 slices bacon
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cups potatoes, diced
- 1/2 cup celery
- 1/2 cup carrot, sliced
- 3 cups boiling water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Old Bay Seasoning
- 1 dash Tabasco sauce, to taste
- 1 cup milk or 1 cup half-and-half
- 2 tilapia fillets, cut into bite sized pieces
- 1 1/2 cups sea scallops
- Fry bacon until crisp, set aside and reserve drippings.
- Cook onion and celery in drippings until translucent.
- Add butter, potatoes, carrots, 2 cups boiling water, salt, pepper and Old Bay.
- Cover and simmer 10-15 minutes until vegetables are tender.
- Add fish and scallops; add more water if needed,.
- Cook 10 more minutes.
- Add milk and Tabasco.
- Reheat, but do not boil.
- Garnish with bacon crumbles.
