Spaghetti Pie
- 6 oz. cooked, drained spaghetti noodles
- 2 Tbsp. margarine
- 1/3 c. Parmesan cheese
- 2 beaten eggs
- 1 c. low-fat cottage cheese
- 1 lb. ground beef or sausage
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1 c. stewed tomatoes, cut
- 1 (6 oz.) can tomato paste
- 1 tsp. sugar
- 1 tsp. dried oregano
- 1/2 tsp. garlic powder
- 1/2 c. grated Mozzarella
- Stir margarine into hot spaghetti.
- Add Parmesan cheese and eggs.
- Form mixture into a "crust" and press into 10-inch pie plate sprayed with nonstick spray.
- Spread cottage cheese in bottom of crust.
- Cook meat with onion and pepper.
- Drain off fat. Stir in undrained tomatoes, tomato paste, sugar, oregano and garlic and heat through.
