Far East Cherries And Ham
- 1 (16 oz.) can lite or dark sweet cherries
- 1 (8 3/4 oz.) can pineapple chunks
- 2 1/2 c. cooked ham, cut in strips
- 2 Tbsp. brown sugar
- 2 Tbsp. oil
- 2 Tbsp. cornstarch
- 1 Tbsp. prepared mustard
- 3 Tbsp. vinegar
- 1 Tbsp. soy sauce
- 1 green pepper, coarsely chopped
- 3/4 c. diagonally cut green onions
- dash of pepper
- Drain cherries and pineapple, reserving syrups.
- Brown ham in oil.
- Combine fruit syrups with brown sugar, cornstarch, mustard, vinegar, soy sauce and pepper.
- Add to ham mixture and cook until thickened.
- Add green pepper, green onions, cherries and pineapple.
- Heat to boiling and cook 1 to 2 minutes longer.
- Serve over steamed rice.
- Serves 6.
