Great Pumpkin Cookies
- 2 c. flour
- 1 c. quick oats
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 c. margarine or butter
- 1 c. firmly packed brown sugar
- 1 egg
- 1 c. raisins
- 1 c. nuts (any kind)
- 1 tsp. vanilla
- 1 c. white sugar
- 1 c. solid pack pumpkin
- 1 c. semi-sweet chocolate or M&M candies
- Set oven to 350u0b0.
- Combine flour, oats, baking soda, cinnamon and salt.
- Cream butter; gradually add sugars, beating until light and fluffy.
- Add egg and vanilla; mix well.
- Add alternately flour mixture with pumpkin, mixing well after each addition.
- Stir in chocolate chips or M&M's.
- For each cookie, drop by tablespoon onto greased cookie sheet.
- Spread and shape using a spatula.
- Bake for 20 to 25 minutes until firm and lightly browned.
- Makes about 5 dozen.
