Eva St. Clair'S Orange Cake Squares

  1. Cream shortening; gradually add sugar, mixing well.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine milk, extract and orange rind; set aside.
  4. Combine flour, baking powder and salt; add to creamed mixture alternately with milk mixture, beginning and ending with flour mixture.
  5. Beat 3 minutes on medium speed of an electric mixer.
  6. Pour into a greased and floured 13 x 9 x 2-inch baking pan.
  7. Bake at 350u0b0 for 30 minutes or until a wooden pick inserted in center comes out clean.
  8. Pour Orange Glaze over warm cake, spreading evenly.
  9. Cut cake into squares to serve. Yield:
  10. 15 to 18 servings.
