Eva St. Clair'S Orange Cake Squares
- 1/2 c. shortening
- 1 1/3 c. sugar
- 2 eggs
- 1 c. milk
- 1 tsp. orange extract
- 1 tsp. grated orange rind
- 2 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- Orange Glaze
- Cream shortening; gradually add sugar, mixing well.
- Add eggs, one at a time, beating well after each addition.
- Combine milk, extract and orange rind; set aside.
- Combine flour, baking powder and salt; add to creamed mixture alternately with milk mixture, beginning and ending with flour mixture.
- Beat 3 minutes on medium speed of an electric mixer.
- Pour into a greased and floured 13 x 9 x 2-inch baking pan.
- Bake at 350u0b0 for 30 minutes or until a wooden pick inserted in center comes out clean.
- Pour Orange Glaze over warm cake, spreading evenly.
- Cut cake into squares to serve. Yield:
- 15 to 18 servings.
