Seafood Gumbo
- 1 baking hen, boiled and boned, save stock
- 1 1/2 sticks butter
- 3/4 c. flour
- 1/2 bell pepper, chopped
- 2 c. celery, chopped
- 2 c. green onions and tops, chopped
- 1 c. tomato sauce
- 1 can stewed tomatoes
- 1 bay leaf
- 1 can crab claw meat
- salt to taste
- 1 1/2 lb. shrimp, cleaned and deveined
- 1 pkg. frozen sliced okra
- 2 c. parsley, chopped fine
- Saute vegetables in 1/2 stick butter.
- Make roux of flour and 1 stick butter.
- Add tomatoes and tomato sauce.
- Add to vegetables. Add seasonings, chicken, crab and chicken stock.
- Cook, covered, slowly for 45 minutes.
- Stir often.
- Add shrimp, okra and parsley. Let cook for 15 minutes.
- Let sit on stove; lid on, burner off, until ready to serve, at least one hour.
- Heat before serving. Taste for salt.
- Ladle over rice in individual bowls.
- Freezes well!!
