Seafood Gumbo

  1. Saute vegetables in 1/2 stick butter.
  2. Make roux of flour and 1 stick butter.
  3. Add tomatoes and tomato sauce.
  4. Add to vegetables. Add seasonings, chicken, crab and chicken stock.
  5. Cook, covered, slowly for 45 minutes.
  6. Stir often.
  7. Add shrimp, okra and parsley. Let cook for 15 minutes.
  8. Let sit on stove; lid on, burner off, until ready to serve, at least one hour.
  9. Heat before serving. Taste for salt.
  10. Ladle over rice in individual bowls.
  11. Freezes well!!
