Chicken Prima Vera
- 1 Tbsp. oil
- 3/4 lb. boneless, skinless chicken breast
- 1 c. broccoli flowerets
- 1 c. thawed frozen green peas
- 1 carrot, cut in strips
- 1 small onion
- 1 can chicken broth
- 1/2 tsp. dried basil leaves
- dash of pepper
- 1 1/2 c. Minute brown rice (uncooked)
- 1/4 c. grated Parmesan cheese
- Heat oil in large skillet.
- Add chicken.
- Cook and stir until browned.
- Add broccoli, peas, carrot and onion; cook and stir until vegetables are tender-crisp.
- Stir in broth, basil and pepper.
- Bring to a boil.
- Stir in rice.
- Return to boil.
- Reduce heat to low; cover and simmer 5 minutes.
- Remove from heat.
- Let stand 5 minutes.
- Stir in cheese.
- Makes 4 servings.
- Can be doubled.
