Chicken Prima Vera

  1. Heat oil in large skillet.
  2. Add chicken.
  3. Cook and stir until browned.
  4. Add broccoli, peas, carrot and onion; cook and stir until vegetables are tender-crisp.
  5. Stir in broth, basil and pepper.
  6. Bring to a boil.
  7. Stir in rice.
  8. Return to boil.
  9. Reduce heat to low; cover and simmer 5 minutes.
  10. Remove from heat.
  11. Let stand 5 minutes.
  12. Stir in cheese.
  13. Makes 4 servings.
  14. Can be doubled.
