White Bean Chili
- 3 lb. cooked Great Northern beans (canned or bottled)
- 2 lb. boneless chicken breasts (skin removed)
- 1 Tbsp. olive oil
- 1/4 tsp. garlic powder
- 2 medium onions, chopped
- 2 tsp. ground cumin
- 1/4 tsp. ground cloves
- 1/4 tsp. cayenne pepper
- 1 tsp. ground or leaf oregano
- 2 tsp. dried cilantro
- 2 (4 oz.) cans chopped mild green chilies
- 4 c. chicken stock or canned broth
- 12 oz. Monterey Jack cheese, grated
- sour cream
- chopped jalapeno peppers
- salt and pepper to taste
- Cover chicken with cold water and bring to simmer.
- Cook until tender, approximately 15 to 20 minutes.
- Remove from pan and dice into 1/2-inch cubes.
