Quick Carbonara(Italian Ham Spaghetti)
- 1/4 lb. bacon
- 2 Tbsp. olive oil
- 2 Tbsp. butter (optional)
- 1 clove pressed garlic
- 2 c. julienne ham (approximately 1/2 lb.)
- 1 (8 oz.) pkg. spaghetti, cooked and drained
- 1/3 c. Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. chopped parsley
- 3 eggs, beaten
- 1/4 c. sliced black olives (optional)
- 2 sliced pimentos
- Brown bacon; drain, crumble and reserve.
- In electric frypan or large skillet, saute lightly the oil, butter, garlic and ham. Add cooked spaghetti, bacon, cheese, parsley, salt and pepper; stir well.
- Turn off heat.
- Pour beaten eggs over and quickly toss to coat spaghetti evenly.
- Add olives and pimentos, if desired. Serve at once.
- Makes 5 to 6 servings.
