Chickpea Marinara Over Couscous

  1. Heat olive oil in sauce pan.
  2. Saute garlic, onion, and red pepper in olive oil for 5 min--until tender.
  3. Add crushed tomatoes, chickpeas, olives, herbs, salt. and sugar. Simmer for 20 minutes.
  4. Prepare couscous according to package directions.
  5. Serve sauce over couscous and top with parmesan cheese.
