Chewy Oatmeal Cookies
- 1/2 c. butter, softened
- 1/2 c. lard, softened
- 1 c. sugar
- 1 c. firmly packed brown sugar
- 2 eggs
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. quick cooking oats, uncooked
- 1/2 c. chopped pecans
- 1/2 c. flaked coconut
- Cream butter and lard in a large mixing bowl; gradually add sugar, beating well.
- Add eggs and mix well.
- Combine flour, baking powder, soda and salt in a small mixing bowl; add to creamed mixture, stirring until well blended.
- Add oats, pecans and coconut, mixing well.
- Drop by heaping teaspoonfuls, 2 inches apart, onto lightly greased cookie sheets.
- Bake at 350u0b0 for 6 to 8 minutes.
- Remove from cookie sheets, cool on wire racks.
- Yields 10 dozen.
