Frosty Raspberry Gelatin Mold
- 1 (3 oz.) raspberry flavored gelatin
- 2 c. boiling water
- 1 (3 oz.) pkg. cream cheese, softened
- 1 Tbsp. mayonnaise
- 1 (8 oz.) can jellied cranberry sauce
- 1/4 c. Burgundy wine
- 1 c. (8 oz.) Del Monte crushed pineapple (in its own juice)
- 1/2 c. whipping cream
- 1 apple, cored and chopped
- 2 bananas
- sliced lettuce
- Drain pineapple, reserving juice.
- Dissolve gelatin in boiling water.
- Whip cream cheese and mayonnaise until fluffy.
- Slowly blend in cranberry sauce, gelatin mixture and wine.
- Stir in pineapple; chill until mixture begins to set.
- Fold in whipped cream.
- Sprinkle reserved juice over apple and bananas; fold into gelatin mixture.
- Pour into six 1-cup molds; chill until firm. Unmold on lettuce-lined plates.
- Makes 6 to 8 servings.
