Chocolate Almond Truffles
- 6 oz. semi-sweet baking chocolate (6 sq.)
- 1/3 c. butter or margarine
- 1 1/4 c. sifted powdered sugar
- 1 (2 3/4 oz.) pkg. sliced almonds, ground
- 3 Tbsp. milk, rum or almond liqueur
- 30 almonds (whole)
- melted chocolate
- 1/2 to 1 c. cocoa
- 1/2 to 1 c. ground almonds (optional)
- In a small, heavy saucepan, melt together the chocolate and butter, stirring occasionally until melted.
- Remove from heat. Stir together the powdered sugar and 2/3 cup ground almonds.
- Stir into the chocolate mixture along with the milk or liqueur.
- Mix well until blended.
- Cover and chill mixture until firm, about 1 to 2 hours.
- Use a round teaspoonful of mixture for candy.
- Mold the chocolate mixture around a whole almond to form a ball.
- If desired, roll balls in chocolate, cocoa powder or ground almonds to coat.
- Put candy in foil.
- Put in freezer 30 minutes.
