Okra And Sausage Creole

  1. In a large, heavy-duty pot, heat olive oil.
  2. Saut onion, parsley, green onion and bell pepper until onions are clear.
  3. Stir in tomatoes, tomato sauce, soy sauce, garlic, water and sausage. Cover and cook over medium heat, stirring occasionally until it comes to a boil.
  4. Add okra, salt, and hot sauce and simmer on low until okra is tender, about 45 minutes.
  5. The longer it cooks, the better the taste.
