Okra And Sausage Creole
- 2 Tbsp. olive oil
- 1 c. chopped onion
- 1 c. fresh chopped parsley
- 1 c. chopped green onion
- 1 c. chopped bell pepper
- 2 c. chopped tomatoes
- 1 c. tomato sauce
- 2 tsp. soy sauce
- 2 cloves garlic, minced
- 1 c. water
- 1 lb. sausage, sliced
- 10 c. sliced okra
- salt to taste
- hot sauce to taste
- In a large, heavy-duty pot, heat olive oil.
- Saut onion, parsley, green onion and bell pepper until onions are clear.
- Stir in tomatoes, tomato sauce, soy sauce, garlic, water and sausage. Cover and cook over medium heat, stirring occasionally until it comes to a boil.
- Add okra, salt, and hot sauce and simmer on low until okra is tender, about 45 minutes.
- The longer it cooks, the better the taste.
