Stuffed Baked Potatoes

  1. Rub potatoes with oil, pierce with fork and bake at 400 degrees for 1 hour, 20 minutes or until tender.
  2. Allow to cool to touch.
  3. Cut potatoes in half lengthwise.
  4. Carefully scoop out pulp, leaving a thin shell.
  5. Place pulp in large bowl.
  6. Saute onions in 1/4 c. butter until tender.
  7. Add to potato pulp along with light cream, sour cream, salt & pepper.
  8. Beat until smooth, fold in cheese, stuff potato shells and place in 13X9 pan.
  9. Melt remaining butter, drizzle over potatoes and sprinkle with paprika. Bake at 350 degrees for 20-30 minutes or until heated through.
