Chicken Chili(Makes 6 Servings)
- 2 1/4 Tbsp. oil
- 1 c. diced onion
- 3/8 tsp. minced garlic
- 1/2 tsp. cumin
- 1 1/2 tsp. chili powder
- 1 3/4 lb. boneless chicken breasts, diced
- 4 1/2 tsp. flour
- 1/2 c. chicken broth
- 1 tsp. salt
- 1/4 tsp. red hot sauce
- 1 Tbsp. diced green chilies
- 1 c. dark red kidney beans
- 1/2 c. green pepper, diced
- Heat oil with first 4 ingredients until onion is al dente. Add chicken.
- Cook 10 to 15 minutes.
- Add flour to make roux. Cook 5 minutes.
- Gradually add chicken broth.
- Cook and stir until smooth.
- Add salt, hot sauce and chilies.
- Bring to a boil. Reduce heat.
- Simmer 30 minutes.
- Stir in beans and green pepper. Cook an additional 5 to 10 minutes.
