Chicken Chili(Makes 6 Servings)

  1. Heat oil with first 4 ingredients until onion is al dente. Add chicken.
  2. Cook 10 to 15 minutes.
  3. Add flour to make roux. Cook 5 minutes.
  4. Gradually add chicken broth.
  5. Cook and stir until smooth.
  6. Add salt, hot sauce and chilies.
  7. Bring to a boil. Reduce heat.
  8. Simmer 30 minutes.
  9. Stir in beans and green pepper. Cook an additional 5 to 10 minutes.
