Impossible Spinach Pie

  1. Preheat oven to 400u0b0F (2051C).
  2. Lightly grease 10-inch pie plate.
  3. Heat 1 inch salted water (1/2 tsp salt to 1 cup water) to boiling.
  4. Add spinach, cover and heat to boiling.
  5. Cook spinach until almost tender (about 5 minutes).
  6. Drain spinach thoroughly.
  7. Mix spinach, onion and cheese in pie plate.
  8. Beat remaining ingredients in blender on High until smooth (about 15 seconds).
  9. Pour into pie plate.
  10. Bake at 400u0b0F (205u0b0C) about 30 minutes or until knife inserted in center comes out clean.
  11. Cool 5 minutes.
  12. Garnish as desired.
  13. NOTE: High altitude increase baking time to 35 minutes.
