Funnel Cake Tacos

• For funnel cake dough
• 2 eggs
• 2 tablespoons sugar
• 1 cup milk
• 1 3/4 cups flour
• 1/4 teaspoon salt
• 1/2 teaspoon baking powder
• chopped cilantro
• For beef taco
• 1 lb ground beef
• 1/2 chopped onion
• 1 minced garlic clove
• 1 (1 ounce) packet taco seasoning
• 3/4 cup water
• For toppings
• cubed avocado
• salsa
• sliced jalapeno
• sour cream
• cilantro (to garnish)
• lime (to garnish)

1. To make the funnel cake:
2. in a mixing bowl, combine eggs, sugar, milk (wet ingredients).
3. in another bowl, combine baking powder, flour, salt (dry ingredients).
4. pour dry ingredients into the bowl of dry ingredients; mix well.
5. add chopped cilantro; mix well again.
6. fill piping bag with mixture.
7. pipe in, making circular shape, the funnel cake mixture into a pan with hot oil; brown both sides then place on tray to drain excess oil.
8. To make taco beef:
9. on a hot skillet, brown ground beef.
10. add chopped onions and chopped garlic; stir.
11. then add taco seasoning and water; stir more.
12. To make assemble:
13. scoop taco beef on top of the funnel cake.
14. then add cubed avocado, salsa, sliced jalapeno, sour cream.
15. garnish with fresh cilantro and limes.
