Chicken Cacciatore

  1. Heat a large frying pan.
  2. Turn heat down to medium-high.
  3. Add generous amount of olive oil.
  4. When pan cools, add hot pepper rings and half of onion wedges.
  5. Fry 1 to 2 minutes.
  6. Add chicken chunks.
  7. Fry until chicken is browned and almost cooked through. Sprinkle with salt, pepper and paprika.
  8. Add bell pepper chunks. Stir to incorporate.
  9. Let peppers cook 2 to 3 minutes.
  10. Add marinara sauce.
  11. Add wine.
  12. Bring to a boil.
  13. Turn heat down to simmer.
  14. Add mushrooms and other half of onion.
  15. Let simmer 5 to 10 minutes.
  16. Serve with crusty bread.
