Chicken Cacciatore
- olive oil
- 1 long, hot pepper, cut into rings
- 1 onion, sliced in wedges
- 1 1/2 lb. chicken breasts, cut into chunks
- 4 to 5 bell peppers, cut into chunks
- 1/2 jar marinara sauce
- 1/4 c. red wine
- 8 mushrooms, sliced
- salt and pepper
- paprika
- Heat a large frying pan.
- Turn heat down to medium-high.
- Add generous amount of olive oil.
- When pan cools, add hot pepper rings and half of onion wedges.
- Fry 1 to 2 minutes.
- Add chicken chunks.
- Fry until chicken is browned and almost cooked through. Sprinkle with salt, pepper and paprika.
- Add bell pepper chunks. Stir to incorporate.
- Let peppers cook 2 to 3 minutes.
- Add marinara sauce.
- Add wine.
- Bring to a boil.
- Turn heat down to simmer.
- Add mushrooms and other half of onion.
- Let simmer 5 to 10 minutes.
- Serve with crusty bread.
