Hugo Hot Flash'S German Pizza

• 1 1/2 c. fat
• 3 medium potatoes
• salt and pepper
• 1 (7 oz.) can Spam, cut into strips
• 1/2 c. chopped onion
• 1/2 c. chopped green pepper
• 3 eggs, beaten
• milk
• 1/2 c. shredded Cheddar cheese

1. Melt fat in a large skillet.
2. Pare and slice the potatoes. Spread 1/2 of potatoes in the skillet.
3. Sprinkle with salt and pepper.
4. Arrange 1/2 the Spam strips over the potatoes in spoke fashion.
5. Add another layer of potatoes, the onion, green pepper and Spam strips.
6. Cover and cook over low heat for about 20 to 30 minutes.
7. Beat the eggs with a small amount of milk.
8. Pour the eggs over all.
9. Cover and cook until the eggs are set, about 10 minutes.
10. Top with cheese.
11. Cover and cook until the cheese melts. Serves 4 to 6.
