Blackberry Jam Cake With Caramel Icing
- 1/2 c. margarine, softened
- 1/2 c. brown sugar, firmly packed
- 1/2 c. white sugar
- 3 eggs
- 1/2 c. buttermilk
- 3/4 c. blackberry preserves
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1/4 tsp. cloves
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1 1/2 tsp. cocoa
- 1 c. raisins
- 1 c. walnuts, chopped
- Cream together margarine and sugars.
- Add eggs, one at a time, mixing thoroughly after each one is added.
- Stir in buttermilk and preserves, mixing well.
- Sift together dry ingredients and add to mix.
- Pour into greased and floured 9 x 13-inch pan and bake at 350u0b0 for 30 to 35 minutes.
- (Test with toothpick.)
- Cool.
