Fruit Pizza
- 1 (20 oz.) pkg. sugar cookie dough
- 1 (8 oz.) pkg. softened cream cheese
- 1/4 c. confectioners sugar
- 8 oz. frozen whipped topping, thawed
- 2 to 3 kiwi fruit, peeled and thinly sliced
- 1 to 2 firm bananas, sliced
- 1 (11 oz.) can mandarin oranges, drained
- 1/2 c. red grape halves
- 1/4 c. sugar
- 1/4 c. orange juice
- 2 Tbsp. water
- 1 Tbsp. lemon juice
- 1/2 to 1 tsp. cornstarch
- pinch of salt
- Pat cookie dough into an ungreased 14-inch pizza pan.
- Bake at 375u0b0 for 10 to 12 minutes or until browned; cool.
- In a mixing bowl, beat the cream cheese and confectioners sugar until smooth. Fold in whipped topping.
- Spread over crust.
- Arrange fruit on top.
- In a saucepan, combine the sugar, orange juice, water, lemon juice, cornstarch and salt.
- Bring to a boil, stirring constantly for 2 minutes or until thickened.
- Cool.
- Brush over fruit. Chill.
- Store in refrigerator.
- Yields 16 to 20 servings.
