Indian Rice Pilaf

  1. Rinse rice until clear and drain.
  2. Soak saffron in 2 tablespoons of hot water.
  3. In a heavy 3 to 4-quart pan, melt butter.
  4. Add cinnamon and cloves and coat with butter.
  5. Add onions and cook 7 to 8 minutes until soft and golden brown.
  6. Add rice and cook 5 minutes, stirring frequently.
  7. Add 4 cups water and bring to boil.
  8. Stir in sugar, molasses, salt, cardamon seed and saffron with its water.
  9. Simmer covered for 25 minutes.
  10. Fluff and serve.
  11. Serves 6 to 8.
