Sweet Potato Pies
- 4 lb. sweet potatoes
- 1/2 lb. butter
- 1/2 doz. eggs
- 4 Tbsp. vanilla flavor
- 2 Tbsp. nutmeg
- 1 Tbsp. cinnamon
- 3 c. sweet milk
- 1 Tbsp. salt
- 3 c. sugar
- Peel and clean
- the potatoes.
- Place in a pot and cover with water; bring to
- a
- boil
- and let cook over a medium fire until done.
- Remove the potatoes from the water and drain.
- In a mixing bowl mash the potatoes well.
- Add the butter, flavor, nutmeg, cinnamon, salt, sugar and eggs.
- Mix well and gradually add the milk until a smooth custard is made.
- A little more or a little less milk may be needed.
- Pour in a 9-inch pie pan and bake in a preheated
- oven
- cook
- for
- 2
- to 2 1/2 hours at 325u0b0.
- Makes 3 to 5 pies.
