Enchilada Casserole(A Simple Introduction To Mexican Cookery)

  1. Preheat oven to 375u0b0F (190u0b0C).
  2. Lightly butter a 2-quart casserole.
  3. Crush 1/2 cup of the corn chips and reserve for top. In a medium bowl, combine remaining corn chips, Ready Hamburger Mix, chili, enchilada sauce and tomato sauce.
  4. Pour into prepared casserole.
  5. Bake about 20 minutes, until heated through.
  6. Remove from heat.
  7. Spread sour cream on top.
  8. Sprinkle with grated cheese and reserved crushed corn chips.
  9. Bake 5 more minutes until cheese is melted.
  10. Makes 6 servings.
