Goulash Soup
- 1 medium onion
- 4 Tbsp. margarine
- 3 to 4 Tbsp. Hungarian paprika
- 4 Tbsp. margarine
- 3/4 to 1 lb. cubed beef
- 2 cans beef broth
- 1 can water
- 1 small can tomato sauce
- 1 can water
- 2 medium potatoes, diced fine
- Saute onion diced fine in 4 tablespoons margarine until tender.
- Add paprika. Cook until bubbly.
- Put in bowl and set aside. In same pan, melt 4 tablespoons margarine and cubed beef, which has been floured.
- Cook until browned.
- Add onion, paprika mixture, beef broth and 1 can water.
- Heat to boiling, stirring. Add tomato sauce and 1 can water.
- Once again, heat to boiling, add potatoes which have been diced.
- Reduce heat to simmer.
- Simmer at least 2 to 4 hours.
- Makes 6 to 8 servings.
