Moussaka Stir-Fry

  1. In a large bowl, mix beef, garlic powder, oregano and pepper. In a medium size bowl mix broth, tomato paste and sour cream. Heat 1 tablespoon of oil in a large deep skillet over high heat until hot but not smoking.
  2. Add meat mixture and stir-fry, breaking up with a large spoon until no longer pink.
  3. Spoon into a large bowl.
  4. Heat remaining oil in the skillet.
  5. Add eggplant and stir-fry 2 to 3 minutes until slightly softened.
  6. Add bell peppers and stir-fry about 1 minute, until crisp-tender and eggplant is tender.
  7. Add to beef mixture.
